Long form speculation for Galar starters

Need to get this out of my system.

Grookey:

Though its French name comes from marmoset, its dex description is Chimp Pokémon, which is same as Chimchar. So I imagine Grookey will be a Grass-type clone of Chimchar. The notable difference would be Grookey will be more defensive.

Something like:
Final stage: 81/92/81/92/81/103, BST: 530

Abilities: Overgrow/Pickpocket or Overgrow/Sturdy.

As for its typing, Dark and Fighting makes the most thematic sense, but we already have Chesnaught and its unlikely we will see a third repeat of Dark-type, so it will likely be Rock or Psychic. But I'll put my bet in Dark just in case.

Scorbunny:

Scorbunny's species name is Rabbit Pokémon, which matches Azumarill and Buneary/Lopunny. So I suspect Scorbunny will be largely based off these and Buneary/Lopunny line. It seems to be the "sweeper" of the gen, as evidenced by its football aesthetics.

Its stats would be like:

Final stage: 70/101/72/102/72/113, BST: 530

This would make it fastest Fire-type starter ever, but still slower than some other starters.

Abilities: Blaze/Quick Feet or Blaze/Sand Rush

Its typing would work best as Fighting, but that will likely not happen. Ground and Electric are possible options, and I really don't consider Steel as an option.

Sobble:

Sobble's Species name is Water Lizard Pokémon, which is a variation on Charmander's Lizard Pokémon title. I suspect Sobble's design would mix and match Kecleon and Charmander. It is obviously the slowest of the group, but I suspect it will still be decently fast

Something like this can be the case:

Final stage: 85/77/87/113/87/81

Abilities: Torrent/Protean or Torrent/Storm Drain

This would make it stronger Empoleon, but weaker than Primarina.

Its typing would best fit as Water/Ground, but Mudkip already covers that. Water/Poison and Water/Dark would work better then, but common speculation seems to be Water/Ghost, which would fit with established patterns. Either way, all forms will likely get Acid Armor, because it can hide in the water and Lick and Camouflage because Chameleon.

Other things of note:

• If Scorbunny becomes Ground, we would have Ground subtyping for all three types.
• If Grookey becomes Dark, we would have Dark subtyping for all three types.
• If Sobble becomes Dragon, we would have Dragon subtyping for all three types, counting Mega Charizard X and Mega Sceptile.
• If Sobble becomes Poison or Ghost, we would only miss Fire/Poison and Fire/Ghost. 
• If it became Psychic, we would only miss Grass/Psychic.
• If Scorbunny becomes Steel, we would only miss Grass/Steel.
• Rock and Electric are unused for starters. And none of the current bunch seems fitting for Fairy.
